The Story of Chia

Joanna visited the Kimberley region of WA in 2010 to see first hand what the Chia Co are doing. Australia is now the largest supplier in the world of this amazing seed.

    What is the benefit of leaving it sit to “pulp up”? Is this a good idea or can you just chuck it on your breakfast cereal and be on you way?

    • Letting it swell up in some sort of fluid is potentially beneficial from a satiety point on view. Bulk in your stomach helps to distend the stomach walls sending satiety signals to the brain to turn down appetite cues. Doesn’t have to be in water (you wouldn’t want to drink this mixture!) but could be in the eggs as I did in the omelette, or in a smoothie. But if you sprinkle over your salad or breakfast the seeds will swell up once in your gut and so you get the effect after a short period of time anyway.
